Milwaukee, Wis. – December 14, 2021 — Braise Restaurant & Culinary School celebrates 10 years in business on December 21, 2021. David Swanson launched the restaurant and culinary school in 2011.
Swanson is the chef/owner of Braise, located in Milwaukee’s Walker’s Point. In 2004 he launched Braise’s traveling culinary school. In 2008 he pioneered Braise RSA (restaurant supported agriculture) which brings locally sourced foods into restaurants, winning the BizTimes Media I.Q. (Innovation Quotient) award in 2017. Braise Restaurant & Culinary School opened in 2011.
From these successful endeavors came 2013, 2014, 2015, and 2016 James Beard Award nominations for Best Chef in the Midwest. Swanson is in the process of passing the Braise RSA baton to his nonprofit, CultivateMKE, whose focus is to educate and train underserved people in food service avenues.
Swanson said, “To share in the gratitude and celebration of our 10th anniversary, diners all month will receive a special anniversary treat to take home as well as the opportunity to participate in Braise’s 10th Anniversary Raffle. The winner will receive a 12-person private culinary class with sit-down dinner.”
“Additional anniversary specialties are an extended family meal special on December 21st, 22nd, and 23rd, featuring dim sum. And join the Braise family on New Year’s Eve for a delicious four-course meal and wine pairings to ring in 2022,” continued Swanson.
