Windsor, WI- Bachmann Construction, Madison, will break ground at 9 a.m.,June 22 for an expanded Mousehouse Cheesehaus, just off exit 131, I 90/94, Windsor, to more than double the size of the popular family-owned shop and tourist attraction. The Mousehouse will expand to 10,200 square feet to accommodate the store’s continual burst in business, from selling more than 200 cheeses produced in Wisconsin to increased demand for their home-made fudge and online sales.

The enlarged Mousehouse will include separate departments to avoid both employee and customer congestion, according to second-generation family owners, Tony and Vicki Sobczak.

The new Fudge Kitchen, where up to 500 pounds of fudge is made each week, will include two viewing windows. The cheese cutting and wrapping room will also have a viewing window and the deli featuring made- to- order sandwiches, will be larger and include additional seating. Display areas for Wisconsin produced sausages, wines; craft beers, gifts and more will expand and be more consumer friendly.

Bachmann Construction will build shipping and receiving dock, as a result of increased online ordering. The packaging area is getting more room and the cheese cooler space will double with plans to include even more cheeses from additional Wisconsin cheesemakers. Some cheeses are aged more than 10 years at the Mousehouse.

The Sobczak family recently purchased a vacant lot next door which will be paved to accommodate additional vehicles to bring total parking to 35 stalls.

The Mousehouse Cheesehaus will be open during construction, with a mid-November completion date, according to Al Bachmann, president of Bachmann Construction. Bachmann, a third generation family- owned business, renovated the original Mousehouse in 2009. The Mousehouse was started by Tony Sobczak’s parents in 1988.

One thing that will not change at the Mousehouse is the popular statue Igor, the 11-foot tall mouse nibbling on a cheese wedge atop the roof entrance as a welcome to visitors.
